Ingredients

  • 2 kg Trotters
  • 100 ml Oil
  • 2 Onions
  • 1 tbsp Ginger Paste
  • 1 tbsp Garlic Paste
  • 5 Cloves
  • 2 Cinnamon Stick
  • 1 Bay Leaf
  • 2 Black Cardamom
  • 2 Tomatoes
  • 2 tsp Salt
  • 2 tsp Chilli Powder
  • 2 tsp Turmeric Powder
  • 2 tsp Cumin Powder
  • 1 tsp Black Pepper
  • 2 litres Water
  • 1 handful Coriander
  • Ginger Julienned
  • Green Chillies

Instructions

  • Heat the Oil in a large pot over medium heat.
  • Add the Onions and cook, stirring occasionally, until they turn lightly browned.
  • Stir in the Ginger Paste and Garlic Paste, followed by the Whole Spices (Cloves, Cinnamon Stick, Bay Leaf, and Black Cardamom). Cook for 1-2 minutes until aromatic.
  • Add the Tomatoes and cook, stirring, until they soften and blend into the mixture.
  • Add the Spices (Salt, Chilli Powder, Turmeric Powder, Cumin Powder, and Black Pepper) and cook for 3-4 minutes, stirring to combine everything well.
  • Add the Trotters to the pot and cook for 5 minutes, allowing the flavors to coat the meat.
  • Pour in enough Water to cover the ingredients, then cover the pot with a lid. Reduce the heat to low and let it cook for 4 hours, stirring occasionally, until the trotters are tender.
  • Garnish with fresh Coriander, Ginger Julienned, and Green Chillies before serving.
  • The dish is now ready to serve. Enjoy!
