Discover the rich and aromatic world of mutton paya, a traditional dish made with slow-cooked lamb trotters in a flavourful broth. Perfect for warming meals, this recipe is ideal for special occasions or a comforting dinner.
Add the Onions and cook, stirring occasionally, until they turn lightly browned.
Stir in the Ginger Paste and Garlic Paste, followed by the Whole Spices (Cloves, Cinnamon Stick, Bay Leaf, and Black Cardamom). Cook for 1-2 minutes until aromatic.
Add the Tomatoes and cook, stirring, until they soften and blend into the mixture.
Add the Spices (Salt, Chilli Powder, Turmeric Powder, Cumin Powder, and Black Pepper) and cook for 3-4 minutes, stirring to combine everything well.
Add the Trotters to the pot and cook for 5 minutes, allowing the flavors to coat the meat.
Pour in enough Water to cover the ingredients, then cover the pot with a lid. Reduce the heat to low and let it cook for 4 hours, stirring occasionally, until the trotters are tender.
Garnish with fresh Coriander, Ginger Julienned, and Green Chillies before serving.
