Khaman Dhokla is a vibrant and tantalising Indian snack, perfect for those looking to try a new culinary adventure. This steamed delight is not only delicious but also easy to prepare, making it a great choice for beginners in the kitchen.
In a mixing bowl, add gram flour, sugar, turmeric powder, lemon juice, and salt. Mix them well.
Add water gradually and whisk to form a smooth batter. Ensure there are no lumps.
Grease a steaming dish or a thali with oil.
Add Eno fruit salt to the batter and mix gently. You'll see it froth up.
Immediately pour the batter into the greased dish.
Steam the batter for about 15-20 minutes or until a toothpick inserted comes out clean.
Once done, let it cool down for a while and then cut it into squares or diamonds.
In a small pan, heat 2 tablespoons of oil. Add mustard seeds and let them splutter.
Add cumin seeds, sesame seeds, green chilies, ginger, asafoetida, and curry leaves. Sauté for a minute.
Pour this tempering over the steamed dhokla pieces.
Garnish with chopped coriander leaves.
