Dating back centuries, fish masala has been a staple in many households, with each family imparting their unique twist to the mouth-watering dish. The combination of bold spices, fresh herbs, and succulent fish creates a harmony of flavours that is truly irresistible.

While some may find the thought of preparing fish masala intimidating, fear not! This recipe, although complex in its depths of flavour, is surprisingly easy to master with a little patience and practice.

The key lies in balancing the myriad of spices and ingredients to create a harmonious symphony of taste that will leave your guests craving for more.

Ingredients

Fish: You can use any white fish for this recipe, such as cod, haddock, or tilapia. White fish has a mild flavor and firm texture, making it perfect for absorbing the bold spices of masala fish. It cooks quickly and remains tender while developing a crispy, flavourful coating when fried.

Oil: Oil is used to cook the fish and other ingredients in the recipe. It helps to prevent the ingredients from sticking to the pan and adds a rich flavor to the dish.

Lemon Juice: Lemon juice is a key ingredient in this recipe as it adds a tangy and fresh flavour to the fish. It also helps to tenderise the fish and enhance the overall taste of the dish.

Garlic Paste: Garlic paste is used to add a strong and pungent flavor to the dish. It complements the other spices and enhances the overall taste of the fish masala.

Salt: Salt is a crucial ingredient as it helps to enhance the flavours of the other ingredients in the dish. It also helps to balance out the flavors and bring out the natural taste of the fish.

Chilli Powder: Chilli powder is used to add heat and spiciness to the dish. It gives the fish masala a bold and fiery flavor that is characteristic of Indian cuisine.

Chilli Flakes: Chilli flakes are added to the dish to add a more intense heat and spice. They provide a burst of flavor in each bite and complement the other spices used in the recipe.

Cumin Powder: Cumin powder is used to add a warm and earthy flavor to the fish masala. It enhances the overall taste of the dish and pairs well with the other spices.

Coriander Powder: Coriander powder adds a fresh and citrusy flavor to the dish. It complements the other spices and herbs used in the recipe and enhances the overall taste of the fish masala.

Turmeric Powder: Turmeric powder is added to the dish to provide a vibrant yellow colour and a warm, slightly bitter flavor. It also has various health benefits and adds depth to the overall taste of the fish masala.

Paprika: Paprika is used to add a subtle sweetness and mild heat to the dish. It also gives the fish masala a vibrant red color and complements the other spices used in the recipe.

Dried Fenugreek: Dried fenugreek leaves are used to add a slightly bitter and nutty flavor to the fish masala. They have a unique taste that enhances the overall flavour profile of the dish.

Gram Flour: Gram flour is used as a binding agent in the recipe. It helps to coat the fish and create a crispy outer layer when cooked. It also adds a nutty flavor to the dish.

Plain Flour: Plain flour is used in combination with gram flour to help coat the fish and create a crispy texture when cooked. It adds a lightness to the dish and helps to bind the other ingredients together.
