Ingredients

  • 500 g Chicken Thighs Cut into 1-inch cubes
  • 2 Red Onions Cut into chunks
  • 2 Red Bell Peppers Cut into chunks
  • 2 Yellow Bell Peppers Cut into chunks
  • 2 Courgettes Sliced into rounds
  • 2 tbsp Olive Oil
  • 2 tsp Cumin Powder
  • 2 tsp Coriander Powder
  • 1 tsp Paprika
  • 1 tsp Dried Oregano
  • Salt To taste
  • Black Pepper To taste
  • Wooden Skewers Soaked in water for 30 minutes

Marinade

  • 3 cloves Garlic Minced
  • 1 tbsp Lemon Juice
  • 2 tbsp Greek Yogurt
  • 2 tbsp Olive Oil
  • 1 tsp Turmeric Powder
  • 1 tsp Cumin Powder
  • 1 tsp Paprika
  • Salt To taste
  • Black Pepper To taste

Instructions

  • In a bowl, combine all the marinade ingredients.
  • Place the chicken cubes in the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes.
  • Preheat your grill to medium-high heat.
  • Thread the marinated chicken, red onions, red and yellow bell peppers, and courgettes onto the soaked wooden skewers, alternating the ingredients.
  • Drizzle the skewers with 2 tablespoons of olive oil and sprinkle with ground cumin, ground coriander, paprika, dried oregano, salt, and pepper.
  • Grill the chicken kebabs for about 12-15 minutes, turning occasionally, until the chicken is cooked through and the vegetables are tender and slightly charred.
  • Serve the chicken kebabs hot with your choice of side dishes.

Notes

If you are using wooden skewers, soak them in water, this helps prevent them from burning on the grill.
You can serve these chicken kebabs with pitta bread, rice, or a fresh salad.
Feel free to adjust the spice levels to your preference by adding more or less paprika and cumin.
