Preheat the oven to 220°C (200°C fan).
In a mixing bowl, whisk together the plain flour, water, baking powder, salt, and ground black pepper until you have a smooth batter.
Toss the cauliflower florets in the batter, ensuring they are evenly coated.
Place the coated cauliflower on a baking tray lined with parchment paper. Drizzle with vegetable oil.
Bake in the preheated oven for 20-25 minutes or until the cauliflower is golden and crispy.
Meanwhile, prepare the sauce by mixing together the mayonnaise, sweet chilli sauce, sriracha sauce, honey, and lime juice in a bowl.
Once the cauliflower is cooked, remove it from the oven and transfer to a serving dish.
Drizzle the bang bang sauce over the cauliflower.
Garnish with chopped fresh coriander (cilantro), sliced spring onions, and sesame seeds.
Serve immediately and enjoy!
