Chatkhara Tawa Chicken

Do you crave the sizzling flavours of traditional Pakistani cuisine? Look no further than Chatkhara Tawa Chicken – a dish that perfectly encapsulates the intricate spices and bold flavours of the region. This dish has a rich history that dates back centuries, originating from the heart of the Punjab region.

The recipe for Chatkhara Tawa Chicken has been passed down through generations, with each family adding their own unique twist to make it truly their own.

Despite its complexity and depth of flavors, this dish is surprisingly easy to make at home. With the right ingredients and a bit of patience, you can recreate the authentic taste of Pakistan in your own kitchen.

The key to the success of this dish lies in the marinade – a blend of yogurt, ginger, garlic, and a medley of aromatic spices that infuse the chicken with depth and complexity. Once the chicken is marinated, it is cooked on a hot tawa, or griddle, to create a beautifully charred exterior and juicy, tender interior.

Ingredients

Chicken Legs: Chicken legs are a popular cut of meat known for their juicy and flavorful taste. They consist of the drumstick and thigh attached together, with the skin still intact, which helps to keep the meat moist and adds extra flavor when cooked.

Yoghurt: Yoghurt is a dairy product made from fermenting milk with live bacteria cultures. It has a creamy texture and a slightly tangy flavor, which makes it a great ingredient for marinating meat as it helps to tenderize and add moisture to the chicken.

Double Cream: Double cream is a type of heavy cream that contains a high percentage of milk fat. It adds richness and creaminess to dishes, making it perfect for adding a luxurious texture to the marinade for the chicken.

Vinegar: Vinegar is a sour liquid made from fermenting ethanol. It adds a tart flavor to the marinade and helps to tenderize the meat, resulting in a more flavorful and succulent chicken dish.

Oil: Oil is used for cooking and frying the chicken legs. It helps to prevent the chicken from sticking to the pan and adds moisture to the dish.

Ginger Paste: Ginger paste is made from fresh ginger root that has been blended into a smooth paste. It adds a warm and spicy flavor to the marinade, which complements the other ingredients in the dish.

Garlic Paste: Garlic paste is made from fresh garlic cloves that have been crushed into a smooth paste. It adds a pungent and savory flavor to the marinade, enhancing the overall taste of the dish.

Salt: Salt is a common seasoning that enhances the natural flavors of the ingredients in the dish. It also helps to tenderize the meat and balance out the other flavors in the marinade.

Garam Masala: Garam masala is a blend of ground spices commonly used in Indian cuisine. It adds warmth and depth to the dish, with a mix of flavors such as cinnamon, cardamom, and cloves.

Chilli Powder: Chilli powder is made from dried and ground chilies, adding heat and a spicy kick to the dish. It gives the chicken a bold and fiery flavor that pairs well with the other ingredients in the marinade.

Turmeric Powder: Turmeric powder is a bright yellow spice with a warm and slightly bitter flavor. It adds color to the dish and a subtle earthy taste that complements the other spices.

Crushed Chilli: Crushed chili flakes are dried and crushed red chilies that add a fiery and intense heat to the dish. They provide a burst of spice that can be adjusted to suit individual preferences.

Lemon Juice: Lemon juice adds a tangy and citrusy flavor to the marinade, cutting through the richness of the cream and yogurt. It also helps to tenderize the meat and add a brightness to the dish.

Green Chillies: Green chilies are mild in heat and add a fresh and slightly fruity flavor to the dish. They can be chopped and added to the marinade for a subtle kick of spice.

Coriander: Coriander, also known as cilantro, is a herb with a bright and citrusy flavor. It is often used as a garnish for dishes and adds a fresh and aromatic element to the overall flavor profile of the chicken.

Ingredients

  • 3 Chicken Legs
  • 200 g Yoghurt
  • 100 g Double Cream
  • 1 tbsp Vinegar
  • 1 tbsp Oil
  • 1 tsp Ginger Paste
  • 1 tsp Garlic Paste
  • 1 tsp Salt
  • 1 tsp Garam Masala
  • 1 tsp Chilli Powder
  • 1 tsp Turmeric Powder
  • 1 tsp Crushed Chilli
  • 1 tbsp Lemon Juice
  • 3 Green Chillies
  • 1 handful Coriander

Instructions

  • Take the chicken legs and make deep slits in them using a sharp knife. This will help the marinade penetrate better and enhance the flavour.
  • In a large mixing bowl, combine the ingredients. Mix everything thoroughly until the ingredients form a smooth, well-blended marinade.
  • Add the chicken legs to the bowl and coat them evenly with the marinade, ensuring it gets into the slits. Cover and let it marinate for at least 30 minutes, preferably longer for deeper flavor.
  • Place a tawa pan on medium heat and add a tablespoon of oil. Allow it to heat up properly before adding the chicken.
  • Place the marinated chicken legs on the pan and cook for 4-5 minutes on each side, flipping carefully to get an even sear.
  • Pour the remaining creamy masala over the chicken legs, ensuring they are well-coated.
  • Cover the pan with a lid and reduce the heat to low. Let it cook for 15-20 minutes, allowing the chicken to absorb all the flavors and become tender.
  • Once the chicken is fully cooked and the masala has thickened, garnish with freshly sliced green chillies and chopped coriander. Serve hot and enjoy!
